The best sandwich ever.

Good afternoon friends!

It’s a gorgeous day here in D.C. Once I finish this post I’m heading out for a walk with my Biology flashcards!

So today for lunch I had one of my very favorite concoctions: Tuna Salad with a Healthy Twist.

Remember when my lunch was featured on Kath’s blog last year? This is what I had! It was one of my favorite lunches when I worked in an office, and it still is. Try packing the tuna mixture in a tupperware and bringing the pita separately, then combining them at work so it doesn’t get soggy 🙂

Tuna Salad with a Healthy Twist

  • 1 small (2.6 oz) packet chunk light tuna (packed in water)
  • Nonfat Greek or regular plain yogurt
  • Dijon mustard
  • Balsamic Vinaigrette
  • 1 celery stalk, chopped
  • Broccoli slaw
  • Feta cheese
  • Fresh spinach leaves
  • 1 whole wheat pita

Place tuna in a bowl. Add a squirt of dijon mustard and a spoonful of yogurt, in the ratio of about 2 parts yogurt to 1 part mustard, and drizzle a little balsamic vinaigrette on top (about a tsp).

Add the chopped celery and broccoli slaw (LOVE this stuff… makes any sandwich instantly more awesome and crunchy) and mix it all up.

Heat or toast a pita, place the tuna mixture inside. Add a few crumbles of feta cheese on top, and then cover with a huge handful of spinach.

Close the pita and enjoy! But don’t toast the pita too long, or else it will end up like this 😦 Bust!! I fail, haha.

Oh well, it was still amazingly tasty, if not a little messier than expected 😉 Pitas are definitely my favorite bread of choice. So yummy!

What’s your favorite go-to lunch?

Have a great day everyone! Stay tuned tomorrow to find out my new favorite strength training move. It’s awesome!

  1. I love broccoli slaw too. I add it to my salads all the time!

  2. I definitely have tuna as one of my go-to lunches, too. I like a little The Heat Is On peanut butter and greek yogurt mixed in mine to kick it up a notch 🙂

  3. I might declare this week – sandwich week, just because your post looks so yummy!

  4. I love that you did something different with your tuna. I have cans of it but I don’t ever know what to do with it beside the traditional type. I’m going to try this for lunch on Friday 🙂
