Chicken & Veggie Pasta

Ingredients:

  • Whole wheat pasta
  • Garlic, finely chopped
  • Veggies (chopped – we used zucchini and broccoli)
  • Chicken breasts, cut into cubes
  • Extra virgin olive oil
  • Salt & pepper to taste
  • Tomato pasta sauce
  • Grated parmesan cheese

Just adjust the amount based on how many people you’re serving :) You can also use white beans instead of the chicken – this is what I do when I’m eating on my own!

Instructions:

Chop veggies (we used zucchini and broccoli), garlic, and raw chicken.

Put the pasta and broccoli in water to boil, then put the garlic, some olive oil, and the raw chicken in a skillet. Once the chicken is almost cooked, add in the zucchini and some salt and cracked pepper.

Once the pasta is ready, drain it, put it back into the big pot, and add the chicken and veggies on top of it. Mix it all together, and you are ready to eat!

We topped our pasta with some Prego tomato sauce and grated parmesan, but pesto would also be great.

Enjoy! This is an especially great meal for the night before a big race!

  1. I do something similar. Instead of pasta sauce I throw in one chopped tomato, a couple spoons of tomato paste, and a little bit of water. I like to think this is fresher.

    I also add chopped onion, red pepper, and eggplant chunks. I let the sauce simmer for 15-20 minutes while the pasta cooks.

    If you want to thicken the sauce, slowly add flour until it gets to your desired consistency. It won’t be thick and goopy like store-bought sauce but it tastes good.
